A hospitality group whose restaurants have won several awards is taking Head Chef expressions of interest for a luxury Modern Japanese fine-dining restaurant opening in the Sydney CBD in mid 2027. The venue will sit in a prestigious new development, and master ceramic artisans are helping to shape its design.
You would run the kitchen brigade with the Executive Chef, aim for the highest culinary standards and help the restaurant build its name. The group wants a leader who is self-assured yet modest, team-minded and respectful of each colleague, in a kitchen where bullying and intimidation have no place. Exceptional international candidates are considered for visa sponsorship.

Key Responsibilities
- Inspire, coach and lead the kitchen brigade
- Develop menus and innovation together with the Executive Chef
- Execute exceptional food to the highest culinary standards
- Keep consistency, presentation and the guest experience excellent
- Oversee sushi, robata, omakase, à la carte and private dining operations
- Control costs for food, labour and purchasing
- Keep budgets, rosters, stock and profit on track
- Recruit, train and develop chefs, with accountability and operational discipline
- Guard food safety, hygiene and compliance, and foster a respectful, professional, teamwork-based culture
Requirements & Eligibility
- Senior leadership with a proven record in acclaimed Japanese premium-dining restaurants or internationally recognised hospitality groups (time at renowned restaurants of comparable calibre is highly regarded)
- Exceptional Japanese culinary knowledge, technical ability and attention to detail
- Strong commercial understanding of kitchen financial performance, food and labour costs, and a demonstrated ability to develop, motivate and retain outstanding kitchen teams
- Excellent communication, organisation and leadership skills, and a calm, composed, professional approach under pressure
