Leading a hotel kitchen from daily bistro and bar service to charity events and big celebrations is the heart of this Head Chef job in Brisbane. The hotel wants a Head Chef / Kitchen Manager to set the menus, guide the team and deliver food with quality, consistency and strong commercial results, including sporting lunches.
The events and functions operation is expanding, so the role covers both busy meal periods and large occasions. Sponsorship is available for the right candidate.

Key Responsibilities
- Guide, mentor and grow the chefs and kitchen attendants, encouraging a positive, professional kitchen culture
- Design and cost modern Australian menus for bistro, bar and events, with consistent presentation
- Coordinate event catering with the functions team, including preparation, staffing and timing of service
- Manage purchasing, stock, food costs, kitchen labour and waste against agreed budgets
- Maintain rigorous food safety, hygiene, allergen and WHS standards, and stay hands-on and calm under pressure at service
Requirements & Eligibility
- Experience as a Head Chef or Kitchen Manager, particularly in hotel dining and high-volume functions or banqueting
- Culinary skill combined with sound financial judgement, and the ability to run busy meal services next to large events
- Clear communication, a practical approach and a commitment to developing your team, plus Certificate III in Commercial Cookery
- Food Safety Supervisor certification
