Key Responsibilities
- Boners: bone out carcasses and quarters without supervision and make commercial cuts from beef/veal, lamb/sheep and pork, protecting yield and quality
- Slicers and trimmers: portion meat to the customer's and production's specifications, trimming excess fat, gristle and unwanted material so waste stays low and quality stays steady
- Slaughtermen: carry out slaughter floor operations that depend on the species, including stunning and shackling where authorised, sticking and bleeding, skinning or hide removal, carcass dressing and evisceration; follow safe food handling practices
Requirements & Eligibility
- Hands-on commercial meat work experience, with practical skills for the role
- Strong knife skills; accurate bone removal and trimming for boners
- Able to identify your species experience, cuts and duties, with a verifiable employment history and references where available
- Q Fever vaccination or immunity evidence where required for the role
- Qualifications and skills assessments, if available
